Hi Kari. The tomatoes in the can are small to medium sized tomatoes, and there are plenty in there. I tested the recipe using canned, not fresh, so I can’t say for absolute certain, but my best guess would be to start with 8 small to medium tomatoes and make the salsa as directed. Taste it and use your best judgement as to if it needs more tomatoes or not.
The main characters in this flavorful salsa are sweet, juicy navel oranges and creamy, crowd-pleasing avocados. I zested the oranges before sectioning them adding an extra layer of citrus delight. Sweet onion, cherry tomatoes, seedless cucumbers and finely chopped jalapeño complete the cast. Of course a generous helping of chopped cilantro adds a fresh zip to any salsa, but if you’re not a fan, a shower of finely chopped fresh basil will work just as well.

Made this yesterday w/my sister & we served it to our husbands & they thought it was the best ever! We all couldn’ Stop eating it!! Also so easy to make. I added a step. If you like salsa w/o tomato skins, just slice in half & lay face down on sheet pan w/parchment paper. In oven on broil about 5 minutes, the skins wrinkle right up & pull off easily!
I’ve tried the recipe both ways simmering and no simmer. I like the no simmer only because it tastes a bit more fresh. I add the garlic and just a bit of lime juice. Was wondering whether or not it requires refrigeration. I’ve heard that storing tomatoes in the fridge is not good for them. My wife wants me to make a batch for her to enter in the salsa cook off at her school. Making over and over while the fresh tomatoes are in season

Looks gorgeous girl!! This looks like the perfect food group to me! I think I could live off salsa and chips! I love that you added roasted garlic, yum! I have never had a salsa in my life that didn’t have a kick of heat to it….everything down here is spicy and the one I love from Trader Joes I buy sometimes is also spicy, so I’m intrigued at how this tastes with no heat added! Now, I’m craving salsa.
To make it, you’ll begin by dicing your plum tomatoes, jalapeños, and onion. Then, you’ll mince your garlic and chop or tear your cilantro leaves. Add all of these ingredients to a bowl and then add in the zest of a lime (my secret ingredient!) along with the juice of a fresh lime. Sprinkle with your salt and pepper and then gently stir to combine.
I made a version of this, but I winged it, strictly from experience (tasting, not making). I used two roma tomatoes, half a sweet onion, one large jalapeno (veined/seeded), half cup cilantro, one whole lime, and a large pinch of salt. I was sure I did something wrong, but it was very good anyway. Finding this recipe was perfect for me since I did the same thing, just different proportions. I’ll do it right next time! But without the heat, a jalapeno is just a green bell pepper.

This is pico de gallo, also called salsa fresca. This is not what most people in the States think of when they think of salsa. The salsa you find at Mexican restaurants and the like is usually a salsa roja, which has very similar ingredients, but is usually pureed and is often made by first roasting the vegetables both to bring out their flavors as well as to get them to the desired texture. Many people make it with canned tomatoes as well, which are also cooked, resulting in the kind of "mouth feel" one expects with this kind of a salsa. In short, the title of this recipe "Mexican Salsa" is very misleading and should really be changed, possibly to "Salsa Fresca" if not just calling it pico de gallo.

If you're looking for a fresh and flavorful salsa, this recipe is an excellent choice. The combination of diced tomatoes, peppers, garlic, and lime juice make for a classic fresh salsa. Serve it with tacos, burritos, or as a party dip with tortilla roll-ups or tortilla chips. It is a very good condiment to serve alongside grilled or baked fish fillets, grilled chicken, steaks, and pork chops.
If salsa isn’t your thing, it’s other half, guacamole, is always an option. We think it should count as its own food group, but that’s another story. This looks INCREDIBLE!! I also judge Mexican restaurants on the quality of their salsa. I became ADDICTED to chips and salsa when my son was first eating solids. Since there is little time to eat when caring for an infant, I would be feeing him with one hand and snacking on chips and salsa with the other. It is now my go-to when I’m having a snack craving!
