Hi Sara! The oil free part is hard, I haven’t found any oil free. But the unsalted and whole grain is pretty much most of the tortilla chips I’ve seen! Many have unsalted versions. For me, as long as they have very few ingredients (corn, lime, oil is the basics) I’m good. We sometimes do unsalted because we don’t eat tons of salt but there are brands with less salt use than others. Cadia makes some great ones!
Made this recipe with my son (10yr old) on a rainy cold Saturday. What a success! Showing him some knife skills, taught him to use a can opener. Told stories. Substituted some of the tomato for a handful of tomatillos so I could teach him to blanch. Finally an hour or so away from technology to just talk with my son. Serve salsa with tortilla chips and dips such as guacamole or soured cream, or use it as a sauce or for topping pasta or pizza. Fruit salsas made with mango or pineapple go well with grilled fish or chicken.

Congratulations on your son becoming a marine. Mine is just getting out of the Navy after 8 years. And I agree with Debra above, boot camp will be the longest 13 weeks of your life. Getting mail from home is so important to them at that time, so yes, write often. My son asked me to, so I wrote him everyday and he was delighted. After a hard days work(out) it is something they look forward to. Your son will do fine and the experience will serve him well in his future career. 
¿Como la elaboramos? Cortamos el queso en trozos (podemos utilizar diferentes tipos de queso, para hacer una salsa más especial y propia), lo ponemos sobre el bol o taza y le echamos una cucharada de leche (se utiliza para que no se solidifique el queso), un poco más si el queso que utilizamos es más seco. Lo metemos al microondas hasta que derrita y voilà cést fini, listo para servir.
Para comenzar hay que pelar la cebolla y picarla en trocitos bien pequeños, aunque si te gusta dejarla picada en trozos más grandes para apreciarlos mejor al ahora de comer la salsa, puedes hacerlo, siempre hazlo a tu gusto. Al acabar vamos a poner a derretir la mantequilla con un chorrito de aceite de oliva virgen en una sartén o cacerola de buen tamaño, y cuando esté fundida agregamos la cebolla y echamos sal por encima.

By default, this isn’t a very spicy salsa.  I would probably rate it is mild, or possibly medium if you are extra sensitive.  All 3 of my kids have eaten it from the time that they were allowed to start eating chips.  There is a little bit of heat from the ROTEL tomatoes, but it is mellowed by the lime.  You can increase the spiciness of the salsa by adding extra raw jalapeño to it in the first blending step, or by using “Hot” ROTEL tomatoes rather than original.

When I googled pico de gallo before writing this post, the first thing that popped up was actually a question — just what is pico de gallo?  Translation: in Spanish, it literally means “beak of the rooster.”  I’ve heard all sorts of stories over the years about why this is.  Some say that the bright colors of the salsa resemble a rooster, others say that the diced salsa resembles bird food, others say that “pico” is referring to the word “picante” which means spicy, and on and on.  Lots of theories.  ;)
If you’re making a pureed salsa and it’s too thin or watery for your liking try adding a cornstarch slurry: for each cup of salsa you want to thicken add 1 tbsp of cornstarch to a seperate bowl. Then add and equal amount of water to the separate bowl. (If you addes 3 tbsp cornstarch then add 3 tbsp water) stir until it forms a paste. Put your salsa in a saucepan. Once it is simmering add the cornstarch slurry to the salsa and stir. (This will not work if the salsa is cold)
The first step for this recipe is to halve the tomatoes, quarter the onions, and throw them all on a sheet pan with the garlic. Toss the pan in a nice and hot oven, and let everything roast. I believe that roasting your tomatoes and onions gives the salsa so much complexity of flavor. I prefer to roast my own tomatoes rather than buy canned roasted tomatoes. It literally only takes minutes! I like to roast the tomatoes just until they start to slightly char.
LOL! I know, no spice here. And you must think I’ve lost it because you know how much I love spice. BUT, I was trying to make this a very family/kid friendly salsa because my whole family loves chips and salsa so much but I’m the only spice fiend. The 4 year old likes some spice, but the others are all spice wussies! It still has loads of flavor, especially with the roasted garlic in there. I love it, although truth be told I often dump my favorite hot sauce over the top. HAHAHA!

Serve slightly chilled or at room temperature. If you serve it really cold it tastes flat. The subtle flavor of the ingredients doesn’t shine through. If you are not convinced, do a taste test. Eat a batch that is ice cold and then eat batch that is at room temperature. You will see the difference. I guarantee it. Pico de gallo is best when eaten fresh.


Had some tomatoes from the Albuquerque grower’s market at their peak (and perhaps a tad beyond). Made the recipe as written except for an extra 3rd serrano (seeds, ribs, and all), 3 large and very fresh garlic cloves, and one chipotle en adobo. It’s cooling in the pan on the stove as I write, but I can already tell this is my new “signature” salsa. Hot diggity!

En unos minutos estará la salsa bien formada, entonces podemos dejarla con la textura que queramos, añadiendo un poco más de nata si lo necesita, o incluso un poco de leche si queremos dejarla un poco más líquida. Made this yesterday w/my sister & we served it to our husbands & they thought it was the best ever! We all couldn’ Stop eating it!! Also so easy to make. I added a step. If you like salsa w/o tomato skins, just slice in half & lay face down on sheet pan w/parchment paper. In oven on broil about 5 minutes, the skins wrinkle right up & pull off easily!
Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. Canned tomatoes are typically picked at their peak ripeness, which means they will be more flavorful and sweet. They are then processed within hours of being harvested to maintain the best flavor. There are different types of canned tomato products, however, diced or whole for salsas will achieve the proper consistency. Fresh tomatoes can be used in combination to add texture, however, they are much more watery since they have not be cooked to release some of the moisture. They are however excellent for chunkier dips like pico de gallo.
Whenever I make this, the bowl is always left empty! The idea for a homemade mango sauce hit me after I saw a chef on television make something similar. It sounded so good, and it wasn’t something I could find in a store at the time. The salsa is especially tasty served with artisan chips —the black bean and roasted garlic ones are my favorite. Pico de Gallo and I go way back! Hahaha… Yes, I can laugh about it now, but when I was 14 and 15 years old, one of my jobs on the weekends was to make huge batches of pico de gallo at my parents’ taqueria. I remember my Dad dragging me out of a sound sleep at 5 in the morning on Saturdays and Sundays to help him open up the taqueria. While my Dad was busy tending to the menudo and barbacoa, I was chopping away and trying to wake up at the same time… Now when I look back, I long for those days, that special time I spent with my Dad. And for me, I can’t have fresh salsa on my table without a fresh bowl of guacamole! Let the weekend begin and don’t forget the chips! #mexicanfood #foodieforlife

Great dish!  I got rave reviews from my family when cooking this for a special holiday dinner. Simple!  I had 5 lbs instead of 4 lbs of robs so they needed about 10 minutes more cooking time. I used a meat thermometer and let the temp rise to 130 degrees F before removing to get to med rare. Be sure to not hit a bone when taking the temp!  One other thing, tent the meat with aluminum foil while resting the meat after the oven.  Serve on a hot plate (I just microwave mine).  :)


We’ve been making this delicious Corn and Black Bean Salsa for years whenever we are having friends over, or when we are heading out to a friend’s house for a cookout. It’s a great dip / appetizer to have with Mexican themed dinners, for taco night and just to have as a crowd pleasing snack. The great thing about this recipe is that it is super easy to make. It’s about 1/2 canned goods and 1/2 fresh ingredients, and it literally only takes a few minutes to put together.
* ~ Can be prepared several hours in advance. Combine lime juice, honey, cumin, garlic and sea salt in a small glass jar. Cover, shake well and refrigerate. Cut up other ingredients except the avocado and keep in separate containers in the refrigerator. Combine just before serving, draining oranges and tomatoes well before adding. Peel and dice avocado. Add avocado to orange mixture and gently stir to combine.
I love cilantro, but this recipe calls for waaay too much of it. I started out with 2 T., then added another, and then another for a total of about 1/4 C. I used fresh cilantro from my garden and maybe that’s more pungent than the store-bought variety. But, had I used the 2/3 C. which the recipe called for I’m sure it would have overwhelmed all the other ingredients. As it is, the 1/4 C. gave the pico a nice cilantro “presence” while still letting all the other wonderful flavors shine through.

Tomatoes. Choose deeply colored, firm with-with-a-little-give, ripe tomatoes for maximum flavor because this recipe centers around the tomatoes.  We want ripe for flavor but not too ripe or they will get mushy and fall apart.  Also, make sure they smell like a tomato – if they don’t smell then they will taste like cardboard.  You can use plum tomatoes, but I prefer Roma tomatoes because they have fewer seeds to scoop out.
