Hi Lizanne, my husband doesn’t like cilantro either. 🙂 I would say it’s completely fine to leave it out in almost every recipe, except for in this salsa. Some favorites that don’t use it all are these Cheese Enchiladas https://tastesbetterfromscratch.com/2016/08/cheese-enchiladas.html, and my Mexican rice ( https://tastesbetterfromscratch.com/2011/09/authentic-mexican-rice.html). Any other recipe, you can just leave it out entirely and it will still be great! Good luck 🙂
Bottom line, pico de gallo is a salsa from Mexico, also known as salsa fresca (fresh salsa), salsa cruda (raw salsa), and salsa huevona (lazy salsa).  It’s traditionally made from chopped fresh tomatoes, onion, chiles (jalapeños or serranos), cilantro, salt and lime juice.  It’s always served chopped, not blended or pureed or mashed.  And it’s used in about a million ways, from sprinkling on tacos and tamales and tostadas, to scooping up with your favorite tortilla chips.
Absolutely wonderful! Just finished making IT! I made it with all fresh ingredients and added some extra little skinny cucumbers! For extra flavor a bit of Heinz Ketchup and Sriracha sauce! My husband just left to pick up some bags of Doritos. We can’t always get the “stuff” we so took for granted in Canada. Thanks so much for this incredible recipe….we both appreciate it!

This is the BEST salsa! The Verde is great too. I didn’t habe Serranos so used jalapenos. Salsa wasn’t “right” so sent son to store, added Serranos. Perfection! Note i use both peppers in recipe. When people come in and see tomatillos on counter they get very happy! This recipe had enhanced our lives bc it’s great. Freezes well and i can use non gmo organic ingredients. Thank you.
This is how I make mine, minus the Cumin. I’m going to try it the next time I make a batch. Family and friends are always asking me to make them some. It’s so easy and sooooo good!! Sometimes I can it too. All you have to do is put it on the stove and heat it up slowly, then into your cleaned and prepped mason jars. It keeps for about 3-4 months unopened.

By default, this isn’t a very spicy salsa.  I would probably rate it is mild, or possibly medium if you are extra sensitive.  All 3 of my kids have eaten it from the time that they were allowed to start eating chips.  There is a little bit of heat from the ROTEL tomatoes, but it is mellowed by the lime.  You can increase the spiciness of the salsa by adding extra raw jalapeño to it in the first blending step, or by using “Hot” ROTEL tomatoes rather than original.

Arrange the tortillas in a stack and cut into 6 equal wedges. Pour about 1-inch of oil in a large frying pan over medium-high heat to 350 degrees F on a deep-fat frying thermometer. Fry just a few at a time, turning occasionally, until crisp and lightly browned, about 1 minute. Drain on paper towels; sprinkle lightly with salt, if desired. Store in an airtight container.
I made this recipe just as described, I drizzled olive oil on the veggies before roasting, and seeded the Tomatoes before roasting. I added two jalapeños fresh picked and one fresh picked green chili. I pulled the skins off the tomatoes when they cooled slightly… The flavor is amazing, perhaps a bit too much heat, I will chill overnight and perhaps only add one jalapeño next time.

Let sit. After you combine the Pico de Gallo ingredients in a bowl, let them sit at room temperate in order for the flavors to meld together.  If you taste it right away, I guarantee you will be disappointed. The salt draws out the flavor from the tomatoes, which we desperately want in this recipe.  Sitting also tones down the raw onion as it mingles with the lime.  Give your Pico de Gallo at least 30 minutes for the magic to happen.

When I googled pico de gallo before writing this post, the first thing that popped up was actually a question — just what is pico de gallo?  Translation: in Spanish, it literally means “beak of the rooster.”  I’ve heard all sorts of stories over the years about why this is.  Some say that the bright colors of the salsa resemble a rooster, others say that the diced salsa resembles bird food, others say that “pico” is referring to the word “picante” which means spicy, and on and on.  Lots of theories.  ;)

Let’s chat about dicing jalapeno!  I always remove the seeds and ribs from my jalapeno’s, if you like your pico on the spicy side just leave some of those jalapeno ribs on.  Be aware that jalapenos contain oils that can burn your skin or eyes.  I am able to handle them with my bare hands, however, if you have sensitive skin you may want to wear gloves.  Be sure to thoroughly wash your hands after dicing your jalapenos before you touch your face or anything else!

Devein jalapenos. The ribs and seeds carry the most heat in peppers, so we are going to remove them but you can always add in some seeds later (as previously discussed).  To devein your jalapeno(s), cut the stem off then cut the jalapeño in half lengthwise.  Scoop out the seeds with a spoon or pairing knife.  If there is still white rib remaining in some places, then slice it out.  Take care to dice the jalapenos finely so the heat is evenly distributed throughout the Pico d Gallo.  Never touch your eyes when dealing with peppers!

Chips and salsa are one of my all-time favorite appetizers and snacks. If I open a bag a chips and start dipping, you can count on that bag of chips being gone by the end of the hour. I have no self control when it comes to snacking on chips and salsa! I want to eat them all and I usually do. My favorite salsa is Pico de Gallo because it is so simple and fresh! You can’t go wrong with this classic salsa.
