I did choose canned diced chilies in this recipe only because I wanted a milder salsa with a hint of smokiness, but if you want a spicier salsa, leave out the diced chiles and roast a couple of jalapeños along with the tomatoes. Or you can even use both. Totally up to you! Want to give it a nice kick? Use a habanero, scotch bonnet, or ghost pepper to really crank up the heat.
Made this recipe with my son (10yr old) on a rainy cold Saturday. What a success! Showing him some knife skills, taught him to use a can opener. Told stories. Substituted some of the tomato for a handful of tomatillos so I could teach him to blanch. Finally an hour or so away from technology to just talk with my son. Fresh tomatoes: Roma or plum tomatoes are my favorites in pico de gallo, since they contain far fewer seeds than most other tomatoes. But really, any large tomatoes (just scoop out the excess pulp) or small tomatoes (cherry and grape tomatoes work great) will do. The freshness of your tomatoes is paramount in this recipe, so try to avoid some of those bland or watery tomatoes that fill stores during the wintertime. And definitely avoid using canned tomatoes.

OMG this is so good!! I made a batch at 7am for a bbq this afternoon and ate half of it for my breakfast, so had to replenish it with another can of tomatoes (only had a can of chopped tomatoes left, which worked fine, plus another pinch of all the other ingredients… Amazing! Only thing I had to change was using garlic powder as I had no fresh, still fine. Used 1 green chili and half a red, no seeds, perfect! And 1/4 tsp sugar, as I’m not a huge fan of sweetness. Let’s chat about dicing jalapeno! I always remove the seeds and ribs from my jalapeno’s, if you like your pico on the spicy side just leave some of those jalapeno ribs on. Be aware that jalapenos contain oils that can burn your skin or eyes. I am able to handle them with my bare hands, however, if you have sensitive skin you may want to wear gloves. Douglas, I was just wondering about using the iron skillet or comal and the tomatoes. I tried a different recipe the other day and used my iron skillet to toast the ancho chilies, tomatoes and serrano peppers it called for. After blending all the ingredients, I used the same skillet to heat and cook the finished sauce. I only thought about it after the fact and wondered if the acidic sauce changed in flavor by using the iron skillet. I am sure our grandmothers used their iron for everything and never worried about the acid in them, so I am sure this question is moot, but I still want to know. I am not a very good cook, even though I try, and last weeks sauce did not turn out very tasty. I am going to give this one a try and hope it comes out better. Thank you for posting this.

Eat with reckless abandon. It is vegetarian and vegan to boot. Kids will eat it too because it is “salsa”, not yucky vegetables and it works just as well with fussy adults who don’t like vegetables.
Absolutely wonderful! Just finished making IT! I made it with all fresh ingredients and added some extra little skinny cucumbers! For extra flavor a bit of Heinz Ketchup and Sriracha sauce! This is how I make mine, minus the Cumin. I’m going to try it the next time I make a batch. Family and friends are always asking me to make them some. It’s so easy and sooooo good!! Sometimes I can it too. All you have to do is put it on the stove and heat it up slowly, then into your cleaned and prepped mason jars. It keeps for about 3-4 months unopened.
