Making this right this very second. Following exactly to start with..except am throwing in a couple of Thai peppers along with the 4 smallish jalapenos...which I may regret...them things are supposed to be killer hot. I will say, that it is taking significantly longer than the 10 minutes prep time for the water to simmer off (step 2), but I'm in no huge hurry....I have wine.

Made this recipe with my son (10yr old) on a rainy cold Saturday. What a success! Showing him some knife skills, taught him to use a can opener. Told stories. Substituted some of the tomato for a handful of tomatillos so I could teach him to blanch. Finally an hour or so away from technology to just talk with my son. By default, this isn’t a very spicy salsa.  I would probably rate it is mild, or possibly medium if you are extra sensitive.  All 3 of my kids have eaten it from the time that they were allowed to start eating chips.  There is a little bit of heat from the ROTEL tomatoes, but it is mellowed by the lime.  You can increase the spiciness of the salsa by adding extra raw jalapeño to it in the first blending step, or by using “Hot” ROTEL tomatoes rather than original.
The addition of fresh onions give this pico de gallo recipe the perfect zing, and the lime helps add freshness while jalapenos add the perfect bit of heat. If you aren’t a big fan of spice be sure to remove all of the membranes and seeds from your jalapenos! This recipe tastes best after it sits for about 20-30 minutes, so the flavors can really blend!
