If you like salsa w/o tomato skins, just slice in half & lay face down on sheet pan w/parchment paper. In oven on broil about 5 minutes, the skins wrinkle right up & pull off easily!

Douglas, I was just wondering about using the iron skillet or comal and the tomatoes. I tried a different recipe the other day and used my iron skillet to toast the ancho chilies, tomatoes and serrano peppers it called for. After blending all the ingredients, I used the same skillet to heat and cook the finished sauce. I only thought about it after the fact and wondered if the acidic sauce changed in flavor by using the iron skillet. I am sure our grandmothers used their iron for everything and never worried about the acid in them, so I am sure this question is moot, but I still want to know. I am not a very good cook, even though I try, and last weeks sauce did not turn out very tasty. I am going to give this one a try and hope it comes out better. Thank you for posting this.
Salsa IS its own food group. Or at least it should be and while we’re at that we could decide it counts as one of your five a day, too ;). I eat salsa every day yet sadly can’t find my favourite organic brand [and there actually is only one brand and kind of organic salsa available in anyway] anymore living in the countryside now. The only ones available contain sugar and even though it’s not a ton I don’t like the fact. At least my dippers are vegetables.

Start with fresh ingredients. The fresher they are the better the results. Don’t use canned tomatoes. It gives the salsa a metallic taste. You’ll notice that there aren’t any limes in the recipe. Whhhaaattt? Limes throw off the balance of flavors by overpowering the flavor of the tomatoes. But, if you prefer your salsa with lime try adding the juice from only one lime.
I'm on the hunt for an out-of-this-world pico de gallo recipe. While this was not it, this will be my go-to base recipe for the time being. Fresh and good. Make sure to drain as much liquid from the tomatoes as possible during seeding and chopping. Let the lime juice and seasonings stand out by eliminating tomato liquid completely. Day 2 the flavor was still good in our case.
Super healthy version of enchiladas since the tortillas are not fried in some oil first. Pico de Gallo and I go way back! Hahaha… Yes, I can laugh about it now, but when I was 14 and 15 years old, one of my jobs on the weekends was to make huge batches of pico de gallo at my parents’ taqueria. I remember my Dad dragging me out of a sound sleep at 5 in the morning on Saturdays and Sundays to help him open up the taqueria. While my Dad was busy tending to the menudo and barbacoa, I was chopping away and trying to wake up at the same time… Now when I look back, I long for those days, that special time I spent with my Dad. And for me, I can’t have fresh salsa on my table without a fresh bowl of guacamole! Let the weekend begin and don’t forget the chips! #mexicanfood #foodieforlife 
¿Como la elaboramos? Cortamos el queso en trozos (podemos utilizar diferentes tipos de queso, para hacer una salsa más especial y propia), lo ponemos sobre el bol o taza y le echamos una cucharada de leche (se utiliza para que no se solidifique el queso), un poco más si el queso que utilizamos es más seco. Lo metemos al microondas hasta que derrita y voilà cést fini, listo para servir.

I made as per the recipe, apart from charring the corn on the gas while I made the patties to give the a little smoke. They were very delicious and tasty, and also quick and easy. I didn't bother with the food processor either. My problem was making the patties to big and too thin, which made them hard to transfer. I also had a wax paper collapse, and landed up having to feed some to a very happy cat! Next time I think I might try cling film, which doesn't dissolve from the meat juices.
Rub one 16x12" piece of parchment with a little bit of oil. Place 1 ball of meat on one half of oiled paper, then fold other half over. Using a rolling pin or wine bottle, gently roll meat into a very thin oval between parchment (it should be about 9x6"). Transfer, with parchment, to a rimmed baking sheet. Repeat with 3 more sheets of paper and remaining meat. Chill until ready to use. 

Una vez tengamos todos los quesos bien fundidos, añadimos por último la nata para cocinar, subimos la potencia el fuego un poco y removemos bien para que se vaya terminando de formar la salsa cuatro quesos. En unos minutos estará la salsa bien formada, entonces podemos dejarla con la textura que queramos, añadiendo un poco más de nata si lo necesita, o incluso un poco de leche si queremos dejarla un poco más líquida. Y al acabar ya podemos servirla en caliente por encima de un buen plato de pasta por ejemplo, verás cómo queda realmente deliciosa.

Fresh tomatoes: Roma or plum tomatoes are my favorites in pico de gallo, since they contain far fewer seeds than most other tomatoes.  But really, any large tomatoes (just scoop out the excess pulp) or small tomatoes (cherry and grape tomatoes work great) will do.  The freshness of your tomatoes is paramount in this recipe, so try to avoid some of those bland or watery tomatoes that fill stores during the wintertime.  And definitely avoid using canned tomatoes.
This is the BEST salsa! The Verde is great too. I didn’t habe Serranos so used jalapenos. Salsa wasn’t “right” so sent son to store, added Serranos. Perfection! Note i use both peppers in recipe. When people come in and see tomatillos on counter they get very happy! This recipe had enhanced our lives bc it’s great. Freezes well and i can use non gmo organic ingredients. Thank you.

I’ve tried the recipe both ways simmering and no simmer. I like the no simmer only because it tastes a bit more fresh. I add the garlic and just a bit of lime juice. Was wondering whether or not it requires refrigeration. I’ve heard that storing tomatoes in the fridge is not good for them. My wife wants me to make a batch for her to enter in the salsa cook off at her school. Making over and over while the fresh tomatoes are in season

One thing though, I have never heard of simmering it. I switch up making mine to where I add all ingredients into a food processor and process until well mixed and chopped and then serve, or I only place the tomatoes and spices in the food processor and process until well chopped and then add the finely chopped onions, jalapenos and cilantro and then mix manually until all is well mixed. This makes for a chunkier salsa, and again I serve immediately.

So pregnant me hears a Mexican song on the radio and immediately envision myself eating dinner at Mexico Restaurant. I decide it’s the chips and salsa I really want and since I’m headed to the grocery store anyway, I decide to try my hand at restaurant style salsa. Found your recipe while in the store, and made it asap when I got home. uncouldnt believe how easy it was! My mind was a bit blown that canned tomatoes are the base ingredient. My only critique would be to leave off the cumin or at least try it in a small bowl to make sure you like it before adding to the whole mixture.
