I am not a very good cook, even though I try, and last weeks sauce did not turn out very tasty. I am going to give this one a try and hope it comes out better. Thank you for posting this.
Vamos a cocinarla a fuego medio hasta que se poche y se dore un poco, para lo que iremos removiendo de vez en cuando para que no se nos pegue. Cuando esté blandita la cebolla vamos a echar un poco de pimienta negra recién molida e iremos agregando los cuatro tipos de quesos troceados, para que se vayan fundiendo más fácilmente. Lo hacemos a fuego medio-suave, para que se vayan mezclando poco a poco y no se nos quemen.
You can easily make enough to feed a large crowd or have some extra to freeze so that you can have it on hand any time the chips and salsa craving hits or company stops by.  You can also cut the recipe in half for a personal sized little batch of salsa.  You won’t want to more than double the recipe because generally the blender or food processor won’t be big enough.
Most jarred, canned, and bottled salsa and picante sauces sold in the United States in grocery stores are forms of salsa cruda or pico de gallo, and typically have a semi-liquid texture. To increase their shelf lives, these salsas have been cooked to a temperature of 175 °F (79 °C), and are thus not truly cruda (raw). Some have added vinegar, and some use pickled peppers instead of fresh ones. Tomatoes are strongly acidic by nature, which, along with the heat processing, is enough to stabilize the product for grocery distribution.
This is a great salsa for beginners in Mexican cuisine. There are other salsas that are a little bit more complicated, and which require that you char the tomatoes and other veggies first. This salsa roja recipe, however, just requires that you blend the raw vegetables together, and then cook them with a bit of olive oil before adding onions and cilantro.

As for the amount of each of these ingredients, it’s totally up to you.  I have measured out my favorite ratios in the recipe included below.  But pico de gallo is totally one of those recipes where it’s best to give it a taste and add more (or less) of what you love.  For example, I love mine nice and spicy, so I usually add two (or three) chile peppers.  Barclay isn’t as big of an onion fan as I am, so he prefers his with less onion (and more finely-chopped) than me.  And as always, feel free to add more or less salt to taste.  You get the idea.
Devein jalapenos. The ribs and seeds carry the most heat in peppers, so we are going to remove them but you can always add in some seeds later (as previously discussed).  To devein your jalapeno(s), cut the stem off then cut the jalapeño in half lengthwise.  Scoop out the seeds with a spoon or pairing knife.  If there is still white rib remaining in some places, then slice it out.  Take care to dice the jalapenos finely so the heat is evenly distributed throughout the Pico d Gallo.  Never touch your eyes when dealing with peppers!
You may notice that there is no spicy element to this fresh salsa. That’s because I personally can’t handle even a little heat, so I always make mild salsas. Traditionally, you’ll want to use jalapeño or serrano pepper to provide the extra kick of heat salsas are known for, and if spiciness is your thing, feel free to add in some heat as needed! It’s all about making the best pico de gallo recipe for your tastes.
Great dish!  I got rave reviews from my family when cooking this for a special holiday dinner. Simple!  I had 5 lbs instead of 4 lbs of robs so they needed about 10 minutes more cooking time. I used a meat thermometer and let the temp rise to 130 degrees F before removing to get to med rare. Be sure to not hit a bone when taking the temp!  One other thing, tent the meat with aluminum foil while resting the meat after the oven.  Serve on a hot plate (I just microwave mine).  :)

Tomatoes. Choose deeply colored, firm with-with-a-little-give, ripe tomatoes for maximum flavor because this recipe centers around the tomatoes.  We want ripe for flavor but not too ripe or they will get mushy and fall apart.  Also, make sure they smell like a tomato – if they don’t smell then they will taste like cardboard.  You can use plum tomatoes, but I prefer Roma tomatoes because they have fewer seeds to scoop out.
Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. ¿Como la elaboramos? Cortamos el queso en trozos (podemos utilizar diferentes tipos de queso, para hacer una salsa más especial y propia), lo ponemos sobre el bol o taza y le echamos una cucharada de leche (se utiliza para que no se solidifique el queso), un poco más si el queso que utilizamos es más seco. Lo metemos al microondas hasta que derrita y voilà cést fini, listo para servir.
Hi Kari. The tomatoes in the can are small to medium sized tomatoes, and there are plenty in there. I tested the recipe using canned, not fresh, so I can’t say for absolute certain, but my best guess would be to start with 8 small to medium tomatoes and make the salsa as directed. Taste it and use your best judgement as to if it needs more tomatoes or not.
I love cilantro, but this recipe calls for waaay too much of it. I started out with 2 T., then added another, and then another for a total of about 1/4 C. I used fresh cilantro from my garden and maybe that’s more pungent than the store-bought variety. But, had I used the 2/3 C. which the recipe called for I’m sure it would have overwhelmed all the other ingredients. As it is, the 1/4 C. gave the pico a nice cilantro “presence” while still letting all the other wonderful flavors shine through.
Looks gorgeous girl!! This looks like the perfect food group to me! I think I could live off salsa and chips! I love that you added roasted garlic, yum! I have never had a salsa in my life that didn’t have a kick of heat to it….everything down here is spicy and the one I love from Trader Joes I buy sometimes is also spicy, so I’m intrigued at how this tastes with no heat added! Now, I’m craving salsa.
Serve slightly chilled or at room temperature. If you serve it really cold it tastes flat. The subtle flavor of the ingredients doesn’t shine through. If you are not convinced, do a taste test. Eat a batch that is ice cold and then eat batch that is at room temperature. You will see the difference. I guarantee it. Pico de gallo is best when eaten fresh.

Hi Sara! The oil free part is hard, I haven’t found any oil free. But the unsalted and whole grain is pretty much most of the tortilla chips I’ve seen! Many have unsalted versions. For me, as long as they have very few ingredients (corn, lime, oil is the basics) I’m good. We sometimes do unsalted because we don’t eat tons of salt but there are brands with less salt use than others. Cadia makes some great ones!
