Let’s chat about dicing jalapeno!  I always remove the seeds and ribs from my jalapeno’s, if you like your pico on the spicy side just leave some of those jalapeno ribs on.  Be aware that jalapenos contain oils that can burn your skin or eyes.  I am able to handle them with my bare hands, however, if you have sensitive skin you may want to wear gloves.  Be sure to thoroughly wash your hands after dicing your jalapenos before you touch your face or anything else!

I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. Most jarred, canned, and bottled salsa and picante sauces sold in the United States in grocery stores are forms of salsa cruda or pico de gallo, and typically have a semi-liquid texture. To increase their shelf lives, these salsas have been cooked to a temperature of 175 °F (79 °C), and are thus not truly cruda (raw). Some have added vinegar, and some use pickled peppers instead of fresh ones. Tomatoes are strongly acidic by nature, which, along with the heat processing, is enough to stabilize the product for grocery distribution.
Tomatoes. Choose deeply colored, firm with-with-a-little-give, ripe tomatoes for maximum flavor because this recipe centers around the tomatoes.  We want ripe for flavor but not too ripe or they will get mushy and fall apart.  Also, make sure they smell like a tomato – if they don’t smell then they will taste like cardboard.  You can use plum tomatoes, but I prefer Roma tomatoes because they have fewer seeds to scoop out.
* ~ Can be prepared several hours in advance. Combine lime juice, honey, cumin, garlic and sea salt in a small glass jar. Cover, shake well and refrigerate. Cut up other ingredients except the avocado and keep in separate containers in the refrigerator. Combine just before serving, draining oranges and tomatoes well before adding. Peel and dice avocado. Add avocado to orange mixture and gently stir to combine.

The extra step of pouring boiling water over the chopped onion and garlic may be new and perplexing to some home chefs. Don't skip this step! The boiling water helps to take the bite out of the raw onions and garlic. You'll be left with their delicious flavor, while the process removes any harshness.
Great pico de gallo recipe, I personally like my salsa juicy so I use large tomatoes and extra lime juice. I also use this as a base for another recipe, A shrimp salsa dish, I add large chunks of cold cooked shrimp, and either Clamato juice or tomato juice and clam juice I also like a little extra cilantro. Served with French bread to dip into the juice makes a great lunch

Use 1-2 jalapeño peppers, depending on how spicy you like your salsa. Make sure you remove the seeds and ribs before dicing the peppers. Cut the jalapeño in half lengthwise, then take a spoon and scrape out the ribs and seeds, working from the bottom to the top of the pepper. Pro tip-wear plastic gloves when working with jalapeños to prevent burning. And never rub your eyes after dicing up a jalapeño, trust me!
