This homemade salsa recipe is pretty basic.  There are lots of recipes out there and lots of great recipes.  Why this one is my trusty go to recipe that I have used most of my life, is the combination of being entirely delicious, but yet still so easy to make!  With the use of some fresh ingredients and some canned you are able to trick your mouth into thinking this recipe took 10 hours of hard labor peeling tomatoes to make, when really I was able to whip up a batch of the homemade salsa in as little as 10 minutes!
The addition of fresh onions give this pico de gallo recipe the perfect zing, and the lime helps add freshness while jalapenos add the perfect bit of heat. If you aren’t a big fan of spice be sure to remove all of the membranes and seeds from your jalapenos! This recipe tastes best after it sits for about 20-30 minutes, so the flavors can really blend!
I'm on the hunt for an out-of-this-world pico de gallo recipe. While this was not it, this will be my go-to base recipe for the time being. Fresh and good. Make sure to drain as much liquid from the tomatoes as possible during seeding and chopping. Let the lime juice and seasonings stand out by eliminating tomato liquid completely. Day 2 the flavor was still good in our case.

I only use one onion and two jalapenos when I make it, but I decided I'd post the original recipe instead of altering it. The way I make it produces a medium heat. I'd imagine making it his way would produce a hot salsa. I really like it with the lime juice. I haven't made it with the vinegar yet.”


Una vez tengamos todos los quesos bien fundidos, añadimos por último la nata para cocinar, subimos la potencia el fuego un poco y removemos bien para que se vaya terminando de formar la salsa cuatro quesos. En unos minutos estará la salsa bien formada, entonces podemos dejarla con la textura que queramos, añadiendo un poco más de nata si lo necesita, o incluso un poco de leche si queremos dejarla un poco más líquida. Y al acabar ya podemos servirla en caliente por encima de un buen plato de pasta por ejemplo, verás cómo queda realmente deliciosa.
Serve slightly chilled or at room temperature. If you serve it really cold it tastes flat. The subtle flavor of the ingredients doesn’t shine through. If you are not convinced, do a taste test. Eat a batch that is ice cold and then eat batch that is at room temperature. You will see the difference. I guarantee it. Pico de gallo is best when eaten fresh.

While some salsa fans do not consider jarred products to be real salsa cruda, their widespread availability and long shelf life have been credited with much of salsa's enormous popularity in states outside the southwest, especially in areas where salsa is not a traditional part of the cuisine. In 1992, the dollar value of salsa sales in the United States exceeded those of tomato ketchup.[5]
Fresh tomatoes: Roma or plum tomatoes are my favorites in pico de gallo, since they contain far fewer seeds than most other tomatoes.  But really, any large tomatoes (just scoop out the excess pulp) or small tomatoes (cherry and grape tomatoes work great) will do.  The freshness of your tomatoes is paramount in this recipe, so try to avoid some of those bland or watery tomatoes that fill stores during the wintertime.  And definitely avoid using canned tomatoes.
Arrange the tortillas in a stack and cut into 6 equal wedges. Pour about 1-inch of oil in a large frying pan over medium-high heat to 350 degrees F on a deep-fat frying thermometer. Fry just a few at a time, turning occasionally, until crisp and lightly browned, about 1 minute. Drain on paper towels; sprinkle lightly with salt, if desired. Store in an airtight container.
¿Como la elaboramos? Cortamos el queso en trozos (podemos utilizar diferentes tipos de queso, para hacer una salsa más especial y propia), lo ponemos sobre el bol o taza y le echamos una cucharada de leche (se utiliza para que no se solidifique el queso), un poco más si el queso que utilizamos es más seco. Lo metemos al microondas hasta que derrita y voilà cést fini, listo para servir. 

Great dish!  I got rave reviews from my family when cooking this for a special holiday dinner. Simple!  I had 5 lbs instead of 4 lbs of robs so they needed about 10 minutes more cooking time. I used a meat thermometer and let the temp rise to 130 degrees F before removing to get to med rare. Be sure to not hit a bone when taking the temp!  One other thing, tent the meat with aluminum foil while resting the meat after the oven.  Serve on a hot plate (I just microwave mine).  :)
Congratulations on your son becoming a marine. Mine is just getting out of the Navy after 8 years. And I agree with Debra above, boot camp will be the longest 13 weeks of your life. Getting mail from home is so important to them at that time, so yes, write often. My son asked me to, so I wrote him everyday and he was delighted. After a hard days work(out) it is something they look forward to. Your son will do fine and the experience will serve him well in his future career. 
Rub one 16x12" piece of parchment with a little bit of oil. Place 1 ball of meat on one half of oiled paper, then fold other half over. Using a rolling pin or wine bottle, gently roll meat into a very thin oval between parchment (it should be about 9x6"). Transfer, with parchment, to a rimmed baking sheet. Repeat with 3 more sheets of paper and remaining meat. Chill until ready to use.
This recipe calls for one heaping cup of corn kernels, which is just about the amount you’ll get from an average-sized ear of corn. When fresh corn is in season, you’ll want to use it in this salsa, but thawed frozen corn can be substituted in other seasons. The texture of frozen kernels is a little softer, but you can expect the same delicious result.
I love cilantro, but this recipe calls for waaay too much of it. I started out with 2 T., then added another, and then another for a total of about 1/4 C. I used fresh cilantro from my garden and maybe that’s more pungent than the store-bought variety. But, had I used the 2/3 C. which the recipe called for I’m sure it would have overwhelmed all the other ingredients. As it is, the 1/4 C. gave the pico a nice cilantro “presence” while still letting all the other wonderful flavors shine through.

* ~ Can be prepared several hours in advance. Combine lime juice, honey, cumin, garlic and sea salt in a small glass jar. Cover, shake well and refrigerate. Cut up other ingredients except the avocado and keep in separate containers in the refrigerator. Combine just before serving, draining oranges and tomatoes well before adding. Peel and dice avocado. Add avocado to orange mixture and gently stir to combine.
Start with fresh ingredients. The fresher they are the better the results. Don’t use canned tomatoes. It gives the salsa a metallic taste. You’ll notice that there aren’t any limes in the recipe. Whhhaaattt? Limes throw off the balance of flavors by overpowering the flavor of the tomatoes. But, if you prefer your salsa with lime try adding the juice from only one lime.
If you’re making a pureed salsa and it’s too thin or watery for your liking try adding a cornstarch slurry: for each cup of salsa you want to thicken add 1 tbsp of cornstarch to a seperate bowl. Then add and equal amount of water to the separate bowl. (If you addes 3 tbsp cornstarch then add 3 tbsp water) stir until it forms a paste. Put your salsa in a saucepan. Once it is simmering add the cornstarch slurry to the salsa and stir. (This will not work if the salsa is cold)
Homemade Salsa may seem fancy, but really it is crazy easy to make and fresh salsa is 100x times better than anything you can get in a jar! You only need a few ingredients and a couple of minutes to make anything from a personal sized batch of salsa to a batch big enough to feed a crowd.  This homemade salsa is made with canned tomatoes to make it easy, but mixed with fresh onion and cilantro so that it tastes completely fresh and delicious! Perfect for a party, as a topping on taco night, or just with a bag of chips and a movie, this salsa recipe is one I find myself making all the time!

Now, this is how seriously easy this salsa is to make, folks: The avocados? They don’t even have to be chopped. Just quarter them and throw those suckers in your blender (well, skin and seed removed, of course), along with some quartered tomatillos, half of a roughly chopped onion and garlic clove, along with a few cilantro leaves for flavor, and a roughly chopped jalapeno for a little heat.
