Super healthy version of enchiladas since the tortillas are not fried in some oil first. Spicy as all get out even without the jalapeño and crushed red pepper, so only keep those in if you like super spicy and adding sour cream.Made with regular cheese on top 'cause it's what I had and it was fine. Nothing incredible, but different and easy to make. Side note-leftovers I scooped in a bowl with some veggie broth and added salt-popped in the microwave-turned into a delicious tortilla soup!
Simple, fresh and easy to make. A winning Mexican restaurant style salsa prepared with plum tomatoes, onion cilantro, and serrano peppers. Fresh tomatoes, not canned, star in this recipe. In Mexico, it is known as salsa roja (red sauce) or salsa de mesa (table sauce). And just like in the U.S., it is served in every restaurant before your meal with tortilla chips.
Made this yesterday w/my sister & we served it to our husbands & they thought it was the best ever! We all couldn’ Stop eating it!! Also so easy to make. I added a step. If you like salsa w/o tomato skins, just slice in half & lay face down on sheet pan w/parchment paper. In oven on broil about 5 minutes, the skins wrinkle right up & pull off easily!

Preparation – While some other salsas are cooked, Pico De Gallo is served raw. Other names for Pico De Gallo are Salsa Cruda and Salsa Fresca, which translate to raw salsa and fresh salsa. And if you can believe it, the pico de gallo translation is Rooster’s Beak. It was originally eaten by pinching pieces together between the thumb and forefinger. Crazy, right?!
I literally just made this. It’s soooo good. I did tweak the recipe a bit. I used fire roasted tomatoes along with the tomatoes with Chiles. I ended up using a whole onion and I pretty much doubled (maybe tripled) the cilantro. I also threw in a few dashes of cayenne pepper because I only had one jalepeno and it wasn’t quite enough. And I put in quite a bit of salt. But all these are personal preferances. The recipe was good as written but I made it how I personally like it. I’ll be keeping this one. I have a feeling ill be making it often, because my husband LOVES it.
Had some tomatoes from the Albuquerque grower’s market at their peak (and perhaps a tad beyond). Made the recipe as written except for an extra 3rd serrano (seeds, ribs, and all), 3 large and very fresh garlic cloves, and one chipotle en adobo. It’s cooling in the pan on the stove as I write, but I can already tell this is my new “signature” salsa. Hot diggity!
I came across this easy and tasty snack while searching online for healthy munchies for kids. Great for after school, it’s really quick to make and filling enough to hold the kids until dinner. To satisfy heftier appetites or to serve as a power lunch, cut each tortilla into fewer pieces or provide one per child. The recipe is easy to increase as needed. —Mary Haluch, Ludlow, Massachusetts

Today's post, however, is an easier version of my roasted salsa recipe that can be made in a fraction of the time by using good quality canned fire roasted green chiles and tomatoes. That way you get the fire roasted flavor and skip the time it takes to do your own roasting and peeling. Everything gets chopped in the food processor or blender, so it goes together really quickly.

Let me know how many times you had to slap your hand from eating it ALL! Leave a comment here, find me on Facebook or tag me on Instagram in your main comment at both @veggiesdontbite #veggiesdontbite so I don’t miss it! I respond to all your comments, I’m never ignoring you! And while I respond, I am most likely snacking on this salsa and chips. It’s addicting. But I can stop if I want. Who am I kidding, no I can’t…

As for the amount of each of these ingredients, it’s totally up to you.  I have measured out my favorite ratios in the recipe included below.  But pico de gallo is totally one of those recipes where it’s best to give it a taste and add more (or less) of what you love.  For example, I love mine nice and spicy, so I usually add two (or three) chile peppers.  Barclay isn’t as big of an onion fan as I am, so he prefers his with less onion (and more finely-chopped) than me.  And as always, feel free to add more or less salt to taste.  You get the idea.

TASTE AND ADJUST THE SALT & HEAT: Give it a taste test and add some more salt if it needs it. If it doesn't have enough heat, add some red pepper flakes. Start with 1/2 teaspoon and go from there. If I'm making salsa for a party, I usually divide the salsa in half and add some heat to some of it. That way I can serve a mild and hot version of the salsa.

As I mentioned above, I picked up the Missions Organics Tortilla Chips and all of the ingredients for my homemade salsa at my local Kroger in Charlottesville. You can use the store locator to find the chips in your area, and be sure to check out the additional recipe ideas as well. They’ve got Tequila Guacamole and Cheese Nachos as well as Chimichurri Steak Tacos! Oh my YUM.
Hi Sara! The oil free part is hard, I haven’t found any oil free. But the unsalted and whole grain is pretty much most of the tortilla chips I’ve seen! Many have unsalted versions. For me, as long as they have very few ingredients (corn, lime, oil is the basics) I’m good. We sometimes do unsalted because we don’t eat tons of salt but there are brands with less salt use than others. Cadia makes some great ones!
