Great pico de gallo recipe, I personally like my salsa juicy so I use large tomatoes and extra lime juice. I also use this as a base for another recipe, A shrimp salsa dish, I add large chunks of cold cooked shrimp, and either Clamato juice or tomato juice and clam juice I also like a little extra cilantro. Served with French bread to dip into the juice makes a great lunch

First and foremost, like any salsa, this one is a crowd-pleasing party dip. But that’s just one of the many hats it wears. On nights you don’t feel like cooking (or it’s simply too hot), spoon this hearty salsa into a soft tortilla, top with a dollop of Greek yogurt and guac, and you’ve got a no-muss, no-fuss meal on your hands. Perhaps most of you already know this delicious salsa, but hey! It is spring and grilling season is about to start, at least here in my area; and I find this a good reason to post it. Salsa Mexicana or “ Pico de Gallo Salsa” as it is known in some areas of México, is one of the simplest of Salsas and it can be ready in a matter of minutes to top your grilled chicken, steaks or fish.

To satisfy heftier appetites or to serve as a power lunch, cut each tortilla into fewer pieces or provide one per child. Tomatoes. Choose deeply colored, firm with-with-a-little-give, ripe tomatoes for maximum flavor because this recipe centers around the tomatoes.  We want ripe for flavor but not too ripe or they will get mushy and fall apart.  Also, make sure they smell like a tomato – if they don’t smell then they will taste like cardboard.  You can use plum tomatoes, but I prefer Roma tomatoes because they have fewer seeds to scoop out.
This is a fantastic and super simple recipe! I doubled the recipe because I consider salsa to be a food group in and of itself and wanted to have some for a few days. I also doubled the jalapeño as I like more kick. I must disagree with one of the other reviewers in that I found the flavor to be better the second day and still better the day after that! So much so that the next time I make it, I will make it the day before I need it so the flavors can meld overnight.

This is how I make mine, minus the Cumin. I’m going to try it the next time I make a batch. Family and friends are always asking me to make them some. It’s so easy and sooooo good!! Sometimes I can it too. All you have to do is put it on the stove and heat it up slowly, then into your cleaned and prepped mason jars. It keeps for about 3-4 months unopened.

I made this today, ate a few test bites (delicious!), took a quick Instagram shot, and then had to run to a volleyball tournament. During our down time, a few of my teammates saw the picture and begged me to run home and grab the salsa. I did, and came back with an extra bag of chips. Four girls and one and a half bags of chips and we demolished THE ENTIRE BOWL. I sent the link to at least five people who requested it and was begged to bring more to the next game. So thank you! Not only for a fantastic recipe (to which I will only add a tiny bit more heat), but for practically making me a culinary god among my friends!

Great dish!  I got rave reviews from my family when cooking this for a special holiday dinner. Simple!  I had 5 lbs instead of 4 lbs of robs so they needed about 10 minutes more cooking time. I used a meat thermometer and let the temp rise to 130 degrees F before removing to get to med rare. Be sure to not hit a bone when taking the temp!  One other thing, tent the meat with aluminum foil while resting the meat after the oven.  Serve on a hot plate (I just microwave mine).  :)
Pico de Gallo and I go way back! Hahaha… Yes, I can laugh about it now, but when I was 14 and 15 years old, one of my jobs on the weekends was to make huge batches of pico de gallo at my parents’ taqueria. I remember my Dad dragging me out of a sound sleep at 5 in the morning on Saturdays and Sundays to help him open up the taqueria. While my Dad was busy tending to the menudo and barbacoa, I was chopping away and trying to wake up at the same time… Now when I look back, I long for those days, that special time I spent with my Dad. And for me, I can’t have fresh salsa on my table without a fresh bowl of guacamole! Let the weekend begin and don’t forget the chips! #mexicanfood #foodieforlife 

¿Cómo la elaboramos? Se hace igual que si hiciésemos una bechamel, añadimos un trozo de mantequilla a la sartén (o una cucharada de aceite), cuando haya fundido y esté caliente añadimos una o dos cucharadas de harina, removemos bien y cuando haya tostado un poco le adicionamos una taza de leche y removemos para que vaya espesando. A continuación le echamos el queso y un poco de sal (podemos añadirle también alguna especie) y una vez este haya fundido lo sacamos del fuego y listo para dipear. ¿Verdad que os viene a la cabeza unos deliciosos nachos con guacamole y esta maravillosa salsa…?
I'm on the hunt for an out-of-this-world pico de gallo recipe. While this was not it, this will be my go-to base recipe for the time being. Fresh and good. Make sure to drain as much liquid from the tomatoes as possible during seeding and chopping. Let the lime juice and seasonings stand out by eliminating tomato liquid completely. Day 2 the flavor was still good in our case.

* ~ Can be prepared several hours in advance. Combine lime juice, honey, cumin, garlic and sea salt in a small glass jar. Cover, shake well and refrigerate. Cut up other ingredients except the avocado and keep in separate containers in the refrigerator. Combine just before serving, draining oranges and tomatoes well before adding. Peel and dice avocado. Add avocado to orange mixture and gently stir to combine.

Cinco de Mayo is this Thursday. You haven’t even prepared for the party you’re attending. You’re supposed to make that thing you said you would. What was it, oh yeah, salsa. Rachel was counting on you. You promised. You scour the internet for a recipe. This one on D.R. Horton’s blog pops up. You think, “How could I mess this up?” It gets made. It’s delicious. You arrive at the party, salsa in hand. You realize you brought the party. Everyone loves it. You’re humbled. You reward yourself with a margarita. Okay, maybe two margaritas.
If you’re making a pureed salsa and it’s too thin or watery for your liking try adding a cornstarch slurry: for each cup of salsa you want to thicken add 1 tbsp of cornstarch to a seperate bowl. Then add and equal amount of water to the separate bowl. (If you addes 3 tbsp cornstarch then add 3 tbsp water) stir until it forms a paste. Put your salsa in a saucepan. Once it is simmering add the cornstarch slurry to the salsa and stir. (This will not work if the salsa is cold)

To make it, you’ll begin by dicing your plum tomatoes, jalapeños, and onion. Then, you’ll mince your garlic and chop or tear your cilantro leaves. Add all of these ingredients to a bowl and then add in the zest of a lime (my secret ingredient!) along with the juice of a fresh lime. Sprinkle with your salt and pepper and then gently stir to combine.
Douglas, I was just wondering about using the iron skillet or comal and the tomatoes. I tried a different recipe the other day and used my iron skillet to toast the ancho chilies, tomatoes and serrano peppers it called for. After blending all the ingredients, I used the same skillet to heat and cook the finished sauce. I only thought about it after the fact and wondered if the acidic sauce changed in flavor by using the iron skillet. I am sure our grandmothers used their iron for everything and never worried about the acid in them, so I am sure this question is moot, but I still want to know. I am not a very good cook, even though I try, and last weeks sauce did not turn out very tasty. I am going to give this one a try and hope it comes out better. Thank you for posting this.
